  • Just a little kiss

    Yesterday afternoon Chad and Lindsay treated us to desserts at Whole Foods (thanks, guys!). Having that store within walking distance is wonderful, yet dangerous…on our wallet, I mean.

    We each got a dose of sugar…Justin had a berry danish and an iced coffee, Chad had a slice of key lime pie and coffee, Lindsay had a French Roast truffle, and I had that little bit of goodness pictured above–a Smores Kiss. It has a thick, crunchy graham cracker topped with a dollop of soft marshmallow, and it’s dipped in smooth dark chocolate. Yum.

  • A delectable dinner

    As promised, here are the recipes for last night’s delicious dinner. And yes, I served steamed broccoli. Again. I love it!

    These mashed potatoes are so yummy. Leaving the skins on gives the finished dish a bit of color, and using olive oil and a bit of Parmesan makes it a little more interesting. Please note that I used much less oil and cheese than the recipe calls for–probably 1/4 cup olive oil and 1/2 cup cheese.

    As for the tofu, this is an easy way to introduce yourself to it if you haven’t already met. The spice mixture creates a crisp and flavorful crust, and the pine nuts add crunch and a burst of flavor.

    Spice-Crusted Tofu

    • 3 tablespoons pine nuts
    • 1 tablespoon paprika
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1/2 teaspoon coarse kosher salt, or to taste
    • Freshly ground black pepper to taste
    • 1 (14-ounce) package extra-firm tofu
    • 3 tablespoons boiling water
    • 2 tablespoons lemon juice
    • 4 teaspoons honey
    • 1 tablespoon extra-virgin olive oil

    Toast pine nuts in a small dry skillet over medium-low heat, stirring constantly, until golden and fragrant, 2 to 3 minutes. Transfer to a bowl to cool.

    Mix paprika, cumin, coriander, salt and pepper in a small bowl. Drain tofu and pat dry with paper towels. Cut crosswise into 8 (1/2-inch thick) slices. Dredge tofu liberally with the spice mixture, coating all sides. Mix boiling water, lemon juice and honey in a small bowl.

    Heat oil in a large nonstick skillet over medium-high heat; swirl to coat the bottom. Add tofu and cook on one side until brown and crusty, 4 to 5 minutes; flip and cook for another 3 minutes. Add the honey mixture to the pan (it will bubble up and evaporate very quickly) and shake to coat the tofu. Serve immediately, sprinkled wit toasted pine nuts.

    Makes 4 servings.

    Smashed Parmesan Potatoes

    • 3 pounds red-skinned potatoes, unpeeled, quartered
    • 2/3 cup freshly grated Parmesan cheese
    • 1/2 cup extra-virgin olive oil
    • Salt and freshly ground black pepper to taste

    Put the potatoes in a large pot with water to cover by at least 2 inches. Cover and bring the water to a boil. Continue boiling until the potatoes are tender, about 15 minutes. Drain, reserving 3/4 cup of the cooking liquid. Return the potatoes to the pot. Coarsely mash the potatoes with a fork, adding enough of the reserved cooking liquid to moisten. Stir in the Parmesan cheese and the oil. Season to taste with salt and pepper and serve.

    Makes 6 to 8 side-dish servings.

  • Play Date

    Today Lindsay and I celebrated the end of her most grueling semester ever. We went grocery shopping together (yes people, we actually think that’s fun), then walked to Whole Foods for lunch. Lindsay had a salad and an amazing soup…Roasted Eggplant Soup. I had a crabmeat California roll, which was super-yummy, although I was a little bummed that I couldn’t use my chopsticks.

    After Whole Foods, we headed to Buffalo Exchange, one of our favorite thrift shops in town. We each found clothes that we couldn’t live without, and of course we spaved a lot. (Spaved: to spend in order to save, as in using coupons for things you wouldn’t normally buy, or buying two of something because it’s buy one, get one half off).

    Then it was home to cook dinner, which was scrumptious…I’ll post that tomorrow.

    Afterward, we went to the movies to watch Crash. It was very aggressive…it challenged my beliefs and my comfort level. I haven’t seen a movie that raw and unsettling since Hotel Rwanda, which, coincidentally, also stars Don Cheadle. I have been consistently impressed with his work lately. Anyway, Crash is definitely a movie you should see, but maybe not take the kids to. It will open your mind a little, and provoke you to question your own beliefs. I hope.

  • Cinco de Mayo!

    In celebration of this oh, so important day in our history, I would like to present…wafer cookies. They actually don’t have anything to do with Cinco de Mayo except that I eat them, and I’m Hispanic, so there you go.

    I used to love these when I was younger, but I remember we didn’t get them often, I think because I would finish them too quickly. Nothing’s changed. I’ve single-handedly (okay, I let Justin have a couple) finished a package in a couple of days. Justin is more picky about them. He prefers vanilla only, in their own special package, because he thinks otherwise the flavors mingle. I don’t really care, I just like the texture. Super crispy and perfectly artificially-flavored, they’re a steal at 99 cents a package. When you’re broke, craving sweets, and roaming the cookie aisle at HEB after 9:00 p.m., wafer cookies are the bomb.
