  • Meet Mela

    Sorry for the lack of posts in the past few days…what can I say? Sometimes I flake out.

    This is my first softie, which I made using a pattern from my new Japanese craft book. I love the idea of making softies, and once I made her I just kept gazing at her and hugging her and positioning her all around the house. But then I kissed her goodbye and packaged her up…she was a gift for my mom.

    I named her Mela (rhymes with Stella) after my mom…her name is Manuela, but when she was younger, her friends called her Mela for short. Isn’t that cute? Anyway, I’d like to make some more softies, but this one has taught me that if I’m not just full of patience, I’d better not start it…so many little pieces! And trying to get all that stuffing in those teeny little arms and legs!

    I also wanted to show off this necklace that my sister made for me…she crocheted it! Can you believe it? It’s soooooo cool. She sent it to me a while back, but I kept forgetting to post it.

    And finally, a little request. I made this little paper wallet a while back, nothing fancy, but I ended up not wanting it.

    Anyone out there need a paper wallet? As Leya and Kickpleat will tell you, I like to send little notes and things to friends across the country…and I’d be happy to send this little wallet and some occasional notes to someone out there who’ll enjoy receiving them.   • Remember?

    It’s thundering outside, and it reminds me…remember when I was little, and I was so scared of the thunder and lightning that I would sleep underneath my bed? Remember that?

    Remember when we went to Lubbock by ourselves and we ate lunch together at Applebee’s, and we ordered dessert? Remember when you would rinse my serving of menudo through a strainer because I thought it was too spicy?

    Remember when I’d spend forever in the cereal aisle trying to decide which one to get? Remember how I’d claim the unused frosting before you even opened the container? Remember when I cut my hair for the first time and I cried all night? Remember when I rolled off the top bunk and you rubbed my back all night long?

    Remember when I was sick and you’d bring me 7-Up and chicken noodle soup? Remember when you’d bake my birthday cakes and decorate them yourself? Remember when I fell and bruised my chin the day before my First Communion and you let me wear makeup to cover it up?

    Remember my first year in college when you’d send me sugar cookies for Halloween? Remember when you gave me the bracelet you’d had forever? Remember on my wedding day when we waited in that little room until they told us it was time?

    Remember that? Remember?

    I love you, Mom. Happy Mother’s Day.

  • Summer nights

    Today Justin worked on our little deck, making a huge seating area and crafting a roll-out shade out of some old bamboo window shades. It looks fabulous! Now it’s up to me to sew up some cushions for the bench. I need to search for some fabric that’s easy to handle but weather-resistant, too.

    My contribution to this gorgeous night was this simple meal…White Bean Dip and Eggplant Dip with carrots, celery, and toasted pita. We got this recipe for the eggplant at a potluck we attended last weekend…a very nice woman named Faye was kind enough to write it down for me, as well as a great recipe for lettuce wraps that I’ll be making later this week.

    This was the perfect light dinner, especially since we took it downstairs and ate with our fabulous landlords. (How often can you say that your landlords are fabulous? We’re so lucky.) We stayed out on their deck chatting the night away…every night should be like this.

    Eggplant Dip

    • 1 large eggplant
    • 1 tablespoon soy sauce
    • 2 tablespoons lime juice
    • 2 tablespoons chile paste (I used Asian chile-garlic paste; Faye used red curry paste)
    • 1/2 cup chopped cilantro
    • 1/2 cup sliced green onions

    Preheat oven to 400ËšF. Pierce eggplant in several places with a knife. Set on a baking sheet covered with foil and bake for 20 to 30 minutes, until it shrivels up a bit. Let cool; peel eggplant and trim ends. If there are lots of seeds, remove most of them with your fingers.

    Combine the eggplant pulp, soy sauce, lime juice, and chile paste in the bowl of a food processor, and puree until smooth. Taste for seasonings, adding more soy sauce or chile paste if desired. Stir in cilantro and green onion.

    Makes about 1 cup.

  • Can you believe this?

    I’m drinking coffee. I’ve never liked coffee. Coffee = gross. But for some reason, in the last week, it has become the most delicious thing. Not just any coffee, though…it has to be coffee that either my husband or my friends Lindsay and Chad have brewed. Coffee shop coffee? Eh. Restaurant coffee? Bleh. Justin coffee? Yum!

    It also has to have about half soymilk and half coffee, and tons of sugar. And I only drink about half a cup. Once or twice a week. But that’s how it starts, right? I’m a little worried about the caffeine, since I’m not used to having any (don’t drink tea, don’t like soda), but I guess I’ll find out soon enough.

    Cafe con leche. Mmmmm. Hopefully olives will be next on my “I used to hate it but now I love it” list…

  • A (big) bowl of pasta

    Tonight I threw this together in an attempt to postpone grocery shopping just one more day. It combines a few of my favorite ingredients, including my current obsession, balsamic vinegar. So good!

    In other news, I have been working on cleaning up my craft area. Hopefully I can post some pictures of it tomorrow, in all its newly-organized splendor. Until then, eat some pasta.

    Angel Hair with Tomatoes and Garlic

    • 6 ounces angel hair pasta
    • 1 tablespoon olive oil
    • 2 cloves garlic, minced
    • 5 medium tomatoes, chopped
    • 1 teaspoon dried basil
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon salt
    • Freshly ground black pepper
    • Parmesan shavings
    • Balsamic vinegar

    Cook pasta according to package directions; drain. Meanwhile, saute garlic in olive oil over medium heat 1 minute. Add tomatoes, basil, oregano, and salt, and cook 3 to 5 minutes. Toss with cooked pasta and top with pepper, parmesan, and a drizzle of balsamic vinegar.

    Makes 2 servings for 2 hungry pasta lovers.
