Things & Stuff

  • mac and cheese and veggies

Tonight I walked over to the market and picked up some things to make mac and cheese. I tossed in some Farmhouse turnips and sweet potato, and it worked out great. But really, you can’t go wrong with mac and cheese, can you?

I served it with a quick salad – just lettuce, Farmhouse radishes, sunflower seeds, and Farmhouse avocado with dressing.

    Me + pasta + salad = happy. 🙂

Macaroni and Cheese with Turnips and Sweet Potato

    • 8 ounces elbow macaroni
    • 1 sweet potato, peeled and diced
    • 5 small turnips, trimmed and diced
    • 4 tablespoons butter
    • 1 shallot, minced
    • 4 tablespoons flour
    • 2 cups milk
    • 1 1/2 cups (6 ounces) grated cheddar cheese
    • Salt and freshly ground black pepper
    • 1/2 cup panko crumbs

Preheat oven to 375F. Spray a 3-quart baking dish with nonstick spray.

Put the turnips and sweet potato in a large bowl and splash in a bit of water. Cover and microwave for 6 to 8 minutes, or until tender. Drain.

Meanwhile, cook macaroni in salted boiling water until al dente. Drain and toss with the vegetables in a large bowl.

Melt the butter in a large saucepan over medium heat. Add the shallot and saute a few minutes until softened. Stir in flour to form a smooth paste. Stir in the milk and bring to a simmer, whisking constantly to avoid lumps. When the sauce thickens, add the cheese, whisking until melted. Remove from the heat and season with salt and pepper.

Stir sauce into macaroni and vegetables. Taste and adjust seasonings. Spoon into sprayed baking dish. Sprinkle evenly with panko crumbs. Bake for 20 – 30 minutes, or until bubbly and top is browned. You can also pop the dish under the broiler for a few minutes to brown the top.

    Makes 6 – 8 servings.

Breakfast: Cheerios with sliced banana and soy milk.

Lunch: My friend A. brought me a breakfast taco, but I wasn’t hungry for it until lunch. I think it has ham and egg and cheese, and it’s in a handmade corn tortilla. I don’t know where she got it, but it was GOOD.

Afternoon snack: I didn’t take a real lunch, so I decided mid-afternoon to pick up pica fruit (fresh cut fruit with chile and lime) for myself, A. and S., since we had been talking about it earlier that day. I went to my favorite fruteria, F&F Fruit Cups.

This is a rusa. It’s made with tons of pineapple and orange, fresh juices, grapefruit Jarritos (Mexican soda), and chile powder.

This is a fruit cup with pineapple, banana and watermelon, topped with chile salt and lime juice. I drank some of the rusa and nibbled on a bit of the fruit, then brought the rest home to Justin, because he LOVES pica fruit. 🙂

Dinner: macaroni and cheese with turnips and sweet potatoes; salad with radishes, avocado, sunflower seeds, and dressing. I decided to use up my Farmhouse turnips and a sweet potato by mixing them with pasta and cheese. You really can’t go wrong. Even our friend Bud ate it and loved it, and he hates veggies. 🙂

Breakfast: tall soy latte. My regular mocha seemed kinda sweet, so I tried a latte, but it tasted equally sweet. I think next time I’ll go for a cappuccino.

    Lunch: egg-in-the-hole , plus a Farmhouse tangerine.

Dessert: a piece of dark chocolate with a smidge of peanut butter.

Dinner: I made this salad concoction. It’s a mixture of tuna, cannellini beans, green onions, radishes, lemon juice, olive oil, salt and pepper; plus a few bits of avocado; all atop lettuce dressed with a quick vinaigrette (red wine vinegar, olive oil, Dijon mustard, salt and pepper). I just made it up, and it turned out to be really awesome.

Dessert: peanut butter-chocolate cupcake that my friend Andy gave me today. Justin and I split it, but I ended up eating more of it because he’s not a big peanut butter fan.

Here’s what I got in my Farmhouse Delivery bushel this week: oranges, collard greens, cauliflower, green onions, lettuce, bok choy, turnips, avocados, radishes and sweet potatoes. I still have some cauliflower from last week, and green onions, too. I need to figure out what to cook with all this stuff. Probably a stir fry, and soup, and salad. Maybe caldo gallego?

Also, I finally went back through all my recipe posts and fixed the ingredient lists. For some reason, when we upgraded the blog template, everything that was in list format suddenly de-formatted and reverted to paragraph form. It was quite frustrating, but I went through every recipe and made the ingredients into a bulleted list. It was kind of fun to go back through those old posts, though… I was so different six years ago! I’ve been thinking a lot about how much I’ve changed, and whether it has been for the better. But that’s a whole other blog post, I think.

Our friend Michelle made a quick video of the surprise zombie party, which you can see here. I’m so glad someone got Bud’s reaction on video – he was totally freaked out!

Breakfast: banana and yogurt. I tried La Creme vanilla, because I used to love it so much, but now it seems really sweet. I ate the banana and tossed most of the yogurt.

Lunch: home-frozen meal. I made quinoa, roasted veggies and chicken a while back, and portioned it into containers and froze them. It worked out really well!

Dinner 1: hot dog with mustard. I had a hot dog craving. We only buy Nathan’s all-beef franks because they’re so dang good. I had these leftover from making the mummy dogs for the zombie party.

Dinner 2: toast topped with collard greens and fried egg. I just sauteed some garlic in olive oil, added the greens, a splash of red wine vinegar and salt, and cooked it until the greens were tender. Then I fried an egg in the same pan. I didn’t finish it all, given that I had just eaten a HOT DOG, but it was still delicious.
