  • Corners of my home

    Amanda over at SouleMama has suggested a photo-meme of sorts for Thursdays, in which we share a corner of our homes. Sounded fun, so here’s mine.

    This is my favorite corner of my home. I love my little stove. It has gas burners, which are so much easier to work with than electric, and are perfect for heating tortillas, roasting peppers, or toasting marshmallows. My comal is at its usual spot, ready to heat tortillas or quesadillas, and one of my most-used little pots is hanging out there, too. I have two tea towels that Kickpleat made for me hanging on the oven door. Above the stove is my spice shelf…yes, I know it’s not the best place for spices, but have I mentioned how very small our apartment is? A lot of those spices need to be replaced, as they’re no longer fresh and potent. Just below the spice shelf is a little wooden plaque of San Pasqual, the patron saint of cooks, that we bought in Taos.

    To the left of the stove is my dish shelf, with all our most-used dishes, a mish-mash of colors and shapes. We decided early on that we didn’t want matching place settings…our ultimate goal is to collect a different plate, bowl, cup, and glass for each setting. We’re getting there, slowly.

    To the right of the stove is a little cart that holds cooking spoons, paper towels, pastas, cereals, tortilla chips, potatoes and other root vegetables, dish towels, bread, and a huge bag of dried New Mexican red chiles. The recycle bin sits next to that, along with our little dish drainer (we don’t have a dishwasher, unless you count me or Justin).

    I love my little kitchen. I love the color, the simplicity, the coziness. I’ve had a few big kitchens in our previous homes, but I still prefer this one, small and warm and loving.

  • True love

    He has beautiful eyes and gorgeous hair. He’s muscular, athletic, and inquisitive. He likes to snuggle at night, and he likes to just hang out with me in silence as I read or craft. I love my kitty cat.

    On the other hand, he wakes me up at 6:00 a.m. every day, by scratching at the foot of the bed, swiping my glasses off my nightstand, or, when he’s really desperate, yelling at me. He likes to sit on top of whatever I’m reading, and loves to stand between me and the computer screen until he gets his fill of lovin’. He occasionally flips out after using his litterbox, jumping and running and pressing his ears back, as if using his litterbox was either the most foul or the most amazing thing he’s ever done.

    A couple of days ago, he was lounging in the sun, stretching out, washing his underarm, and generally being cute. I snapped this photo as he flipped his head upside-down in the ultimate show of lounginess.

    I was so happy to find Bdogg’s site, since she is also a cat lover, and currently has a post featuring her own orange kitty, Joey. Oops…time to stop typing, Roux’s standing in front of the screen again…

  • Cauliflower gratin

    This is one of my favorite cauliflower recipes, from the wonderful Deborah Madison. It’s pretty easy to put together, once you get the cauliflower steamed. I love the pop of the capers and the saltiness of the feta…good stuff.

    So I’m here alone for the evening, since Justin is slaving away at work, and I can’t seem to decide what to do with myself. It’s really windy outside…I can hear the trees rustling and the odd branch scratching against the walls, so going out for a walk, or going out in general, doesn’t sound good. I have a bazillion projects I can work on, but getting motivated to start them is always hard. I’ve cut the fabric for a tiny bag, just for carrying my camera, my phone, and my wallet when I go walking, but I’m not sure I feel like sewing. I have a half-finished tablecloth that I’m embroidering, but, eh, not so much. I have a drawer full of yarn, and ideas for a bag or purse. I have multitudes of paper, for making wallets or journaling. I have a brain full of ideas that I’ve seen on other blogs, or on Craftster. I think I overwhelm myself with ideas and plans, to the point where starting anything seems daunting.

    Maybe tonight is a good night for re-reading one of my favorite books. Or perusing old cookbooks. Or sitting in front of the computer and reading blog after blog after blog. Oh, wait! I’ve already done that. 🙂

    Cauliflower Gratin with Tomatoes and Feta

    • 2 to 3 tablespoons olive oil
    • 1 onion, thinly sliced
    • 2 garlic cloves, chopped
    • 1 1/2 teaspoons dried oregano
    • 1/8 teaspoon ground cinnamon
    • 1 (15-ounce) can diced tomatoes
    • 1 teaspoon honey
    • 1 tablespoon capers, rinsed
    • Salt and freshly milled pepper
    • 1 large cauliflower, about 1 1/2 pounds, broken into florets
    • Juice of 1/2 lemon
    • 2 to 4 ounces crumbled feta
    • Finely chopped parsley

    Preheat the broiler and spray a 2-quart baking dish with cooking spray. (I heated the oven to 400ËšF.)

    Heat the oil in a medium skillet over medium heat. Add the onion, garlic, oregano, and cinnamon and cook until the onion is wilted, about 5 minutes. Add the tomatoes, cook for 7 minutes more, then add the honey and capers and season with salt and paper. Slide the mixture into the dish.

    Meanwhile, steam the cauliflower for 5 minutes. Set it on the sauce and season with salt and pepper. Squeeze the lemon juice over the top and add the feta. Place 5 to 6 inches under the broiler until the sauce is bubbling and the cheese is beginning to melt, about 10 minutes. Garnish with parsley and serve.

    Makes 4 servings.

  • Salad and migas

    I can’t thank you all enough for your suggestions and recipes! I’m excited to try them out.

    This weekend we used up a bit of the produce, and I swear I can taste the difference. Last night we were tired and hungry, so we opted for a salad. I used our lovely lettuce and topped it with kidney beans, matchstick carrots, grated Colby-Jack, diced tomatoes, and boiled farm-fresh eggs. It was wonderful.

    This morning I whipped up some migas, using the yummy eggs and a bunch of the cilantro. I used more of the cilantro for some fresh salsa…a quick mix of tomatoes, jalapenos, onion, and cilantro.

    I’m really liking this local produce thing. I feel more compelled to use up every bit of it, because I know exactly where it came from, and exactly who picked it. I don’t want to waste a bit of the hard work and love that was put into growing my food. I love that connection. It’s so easy to forget about.

    Migas

    • 3 corn tortillas
    • 2 tablespoons olive oil
    • 1/2 small onion, chopped
    • 2 cloves garlic, minced
    • 1 jalapeno, sliced
    • 4 eggs, beaten
    • 1 plum tomato, diced
    • 2 tablespoons minced cilantro
    • 1/2 cup grated cheese
    • 1/2 teaspoon salt

    Brush both sides of each tortilla with oil. Stack them and cut into 1-inch pieces. Heat a nonstick skillet over medium heat, and add the tortillas; saute for 5 to 6 minutes, until slightly browned. Add the onion, jalapeno, and garlic, and saute 2 or 3 minutes more. Lower the heat and add the eggs, stirring constantly. Add the tomatoes, cilantro, and cheese, and cook just until eggs are set.

    Makes 2 to 3 servings.

  • Yikes! Veggies!

    This is what Justin came home with today from the farmer’s market: our first installment from our CSA subscription. That’s a lot of greens! We also got a dozen free-range eggs, and the farmer gave us her phone number in case we needed recipe ideas. They’re so incredibly nice.

    So now I’m off to bury myself in cookbooks to find ideas for all this stuff. Salads are obvious, but aside from having cooked greens as a side dish (not Justin’s favorite thing), I’m going to have to really get creative. Even if I find a recipe for it, it seems like so much food for just the two of us! If anyone has any favorite recipes using these veggies, please share them! I’m going to need all the help I can get…
