  • Cooking School: Spain

    The cooking class last night was a lot of fun…despite slightly cramped quarters and loud neighbors, Lindsay and I were able to learn a bit more about Spanish cooking.

    The chef, Paul Schunder, gave anecdotes about the time he spent in Spain, and demonstrated several recipes.

    First up was Patatas Bravas, crispy potatoes with hot sauce. The potatoes were perfectly deep-fried in canola oil and served with a delicious, smoky tomato sauce for dipping. This sauce was so simple to prepare, but full of flavor from smoked hot paprika. The drizzle on the side is a garlic aioli, from the Central Market deli department. I’m an aioli-lover, but this one was just okay in my book.

    Next was Gaspacho de Andaluz, a fantastic cold pureed soup. Until now, my favorite gazpacho recipe comes from the French Laundry Cookbook…but this one is so much easier and just as tasty. The chef used canned Muir Glen Fire-Roasted tomatoes, which added a great roasty-toasty flavor to the soup. The soup is strained before serving, so the chef kept the solids and used them as a bruschetta topping. This was definitely my favorite dish.

    Ensalada en Salsa Romesco (Vegetable Salad in Romesco Sauce) featured surprising textures and flavors. The vegetables (potatoes, green beans, zucchini, onion, cucumber) were just blanched for a short time, so each one, even the potatoes, were somewhere between raw and crisp-tender. The sauce served as a dressing, a bit spicy, vinegary, and flavorful.

    Next came the Paella amb Verdures (Vegetable Paella), which was good, but not wonderful. I liked the mix of vegetables (cauliflower, leeks, artichoke hearts, roasted bell peppers), but it seemed a little ordinary. There was no saffron in the dish, which was surprising to me.

    And for the big finale, the chef prepared Crema Catalana, a Spanish version of creme brulee. Unfortunately, the dessert never firmed up, so were were unable to see the end result. We did taste the liquid, smooth and cinnamony with a hit of lemon, but without the proper texture, it was quite disappointing. I was a little insulted to find out that the chef had not tested this recipe (or several others) beforehand…it seems disrespectful to the class…we were there to learn how to make Spanish dishes, not to be guinea pigs for an unprepared chef.

    Other than the dessert, the class was a lot of fun, and I loved being in that culinary atmosphere. I will probably make the gazpacho and the hot sauce soon, and possibly the Romesco sauce. I’ve already found several other classes that would be fun to attend in the coming months.

    Actually, I think a bowl of gazpacho would be perfect to dine on while watching Project Runway tonight. Happy Wednesday, everyone!

  • Sweet things

    One of my coworkers and fellow breakfast-chefs, Grit, recently returned from her wedding/honeymoon in Europe. She’s from Germany, but visited Switzerland during her honeymoon, and brought back these lovelies for me…a cute, cute postcard (just look at that cow!) and smooth, dark chocolate. The chocolate is filled with ooey-gooey cherry sweetness, and has a hint of heat from chile extract. About all I can figure out from the package is that it’s bittersweet chocolate with a sour cherry-chile mousse. I think. And there’s 150 grams of it. It’s so, so good.

    And just for fun, here’s a picture of my little family.

    Tonight my friend Lindsay and I are attending a vegetarian Spanish cooking class at Central Market…I’m so excited! Lately I’ve been infatuated with Spain. I recently saw an episode of Passport to Europe with Samantha Brown on the Travel Channel (does anyone else out there love Samantha Brown? And her fabulous wardrobe?), and she visited Seville…I was entranced. Then I picked up A Year in the World by Frances Mayes at the library, and the first chapter? Is all about Spain. And a month or two ago I signed up for this cooking class, and lo and behold! It’s about Spain! We’ll get to watch the chef cook and then we’ll eat his lovely creations: Ensalada en Salsa Romesco; Patatas Bravas; Gazpacho Andaluz de Gonzalo Córdoba; Paella amb Verdures; and Crema Catalana.   • Seven

    Today marks the end of our seventh year of marriage…and the beginning of our eighth. The time flew by so quickly! I’ve been married for one quarter of my life. That’s a long time.

    And still, my heart beats faster when I see his smile, my skin tingles at his touch, and the safest place is in his arms. Happy Anniversary, my love!

    Last night we had a marvelous dinner at Lindsay and Chad’s. They spent all afternoon preparing a gorgeous meal for us…the menu that I posted last week was just a portion of the real thing…we chose the third option, which you’ll read about below.

    We started with this Greek salad, full of crunch from cucumbers and red bell peppers, juiciness from ripe tomatoes, and a bit of saltiness from feta cheese. Lindsay was kind enough to leave out the olives for me.

    Next came the entree, which was described on the menu as a Mediterranean Garden Pizza with Roasted Vegetables on a Homemade Garlic-Oregano Crust. The crust was so flavorful, and the vegetables so perfectly caramelized…so, so good. We also had a bottle of wine to share (D’Arenberg, The Stump Jump Blend).

    And for dessert, one of my favorites, baklava. Gooey, crispy, nutty, and sweet.

    It was a perfect dinner among loving friends. Thank you so much, Chad and Lindsay!

  • I love to be loved

    Sorry for the lack of posts…I’ve been under the weather and haven’t cooked or crafted anything at all. I seriously think I’ve survived on plain pasta and Amy’s frozen burritos for much longer than I care to admit. I did make it to the corner grocery today, though, so hopefully we’ll have a normal dinner tonight.

    My mom sent me this gorgeous knitting bag…I just love it! It’s such a pretty, sturdy canvas, with places to hold needles and scissors, a project, and a separate pocket with a grommet hole for feeding your yarn through. I can’t wait to take it to the next crafty gathering.

    As if that weren’t enough love, our dear friends Lindsay and Chad have set up an elaborate dinner in their home for our upcoming anniversary. We had planned on visiting a fancy-schmancy restaurant, but that didn’t work out, so our pals came to the rescue with this sweet invitation.

    We get to choose an entree, a dessert, and a wine…how sweet is that?! I can’t think of a better way to celebrate our seven years together than with loving friends.

  • Muddy weekend

    Yesterday Justin and Chad competed in the Muddy Buddy…a race in which teams of two take turns mountain biking and trail running, going through various obstacles, and joining together in the end to crawl through a mud pit. They of course had loads of fun, and won fourth place to boot! Their team name was “Team Beat Jerry,” a little joke they made for our friend (a known smack-talker), Jerry. Justin even created t-shirts with the “Beat Jerry” logo on them…Jerry (second from left) loved them. And yes, they did beat Jerry.

    Friday night our friends Natalie and Grant hosted Wine Night, a monthly gathering of friends for food and adult beverages. Grant made a huge batch of sangria and grilled veggie burgers and veggie kabobs. We had all the fixin’s…every kind of mustard and mayo you could think of, leaf lettuce, juicy red tomato slices, pineapple slices, basil leaves, cheese slices…


    ..plus all the yummy dishes you see below. (Cheese and fig spread, caramelized onions, olives, baba ghanoush with tortilla crisps, potato salad, watermelon)


    Natalie set out a tray of these delicious little bites:


    So simple…just seedless grapes, blueberries, and raspberries…but together in one bite, they were amazing. I think I single-handedly polished off most of the tray.

    Such a fun weekend!
