Seven

Today marks the end of our seventh year of marriage…and the beginning of our eighth. The time flew by so quickly! I’ve been married for one quarter of my life. That’s a long time.

And still, my heart beats faster when I see his smile, my skin tingles at his touch, and the safest place is in his arms. Happy Anniversary, my love!

Last night we had a marvelous dinner at Lindsay and Chad’s. They spent all afternoon preparing a gorgeous meal for us…the menu that I posted last week was just a portion of the real thing…we chose the third option, which you’ll read about below.

We started with this Greek salad, full of crunch from cucumbers and red bell peppers, juiciness from ripe tomatoes, and a bit of saltiness from feta cheese. Lindsay was kind enough to leave out the olives for me.

Next came the entree, which was described on the menu as a Mediterranean Garden Pizza with Roasted Vegetables on a Homemade Garlic-Oregano Crust. The crust was so flavorful, and the vegetables so perfectly caramelized…so, so good. We also had a bottle of wine to share (D’Arenberg, The Stump Jump Blend).

And for dessert, one of my favorites, baklava. Gooey, crispy, nutty, and sweet.

It was a perfect dinner among loving friends. Thank you so much, Chad and Lindsay!

  1. THe meal looks totally delicious. I love the idea of herbs in the crust. And it’s hard to beat the flavour of roasted veggies. Greek salad is one of my favorites. It’s so nice to have cooking friends.
