  • Portabello salad

    Oh, goodness, this was so good. I tweaked this recipe for us, and came up with the semi-recipe below. The portabellos are meaty and flavorful, the greens are sharp, and the cheese mellows it all out. So good.

    Roasted Portabello Salad

    • 1 large or 2 medium portabello mushrooms, sliced 1/2-inch thick
    • 6 tablespoons olive oil, divided
    • 2 tablespoons balsamic vinegar
    • 1 teaspoon Dijon mustard
    • Mixed greens: I used mesclun and mizuna from our Farmhouse bin (maybe 5 – 6 cups?)
    • 1/2 cup shredded Manchego cheese

    Preheat oven to 425°F.

    Toss mushrooms with 2 tablespoons olive oil and 1/4 teaspoon each of salt and pepper in a bowl. Roast in 1 layer on a baking sheet, turning once, until golden-brown and tender, about 15 minutes. Cool mushrooms.

    Whisk together vinegar, mustard, 1/4 teaspoon salt, 1/8 teaspoon pepper, and remaining 4 tablespoons oil in a bowl until combined. Toss mushrooms, greens, and cheese with enough dressing to coat (we had quite a bit of dressing left, so maybe half the amounts above would be good for 2 people… but I just put the extra in a jar for tomorrow).

    Makes 2 big servings.

  • FINO for my birthday

    I just realized I haven’t shared photos of our lovely dinner at FINO on my birthday!

    Chad and Lindsay joined us for dinner (somehow I didn’t get a good photo of Linds, probably because she was sitting next to me). The restaurant knew it was my birthday, and they were soooooo sweet! We were treated to a bottle of bubbly sent over by a friend, as well as a few extra dishes and desserts.

    Gulf prawns & cilantro-tomato charmoula

    Chorizo-stuffed Medjool dates; spicy fennel sausage flatbread with manchego cheese, apple and pine nut; blistered padron peppers with sea salt; pork belly

    Fried asparagus and artichoke hearts

    Chicken harira soup with couscous, harissa broth & cinnamon; tortilla Espanola & black truffle aioli

    Fried goat cheese with red onion jam & honey

    Zucchini cake with cinnamon ice cream, candied walnuts & PX sherry caramel

    Coconut flan & poached apricot

  • Broccoli and lemon

    Hooray for recipes that work! Tonight I played around with this recipe and came up with a delicious dinner using our Farmhouse broccoli. I substituted pine nuts for the bacon, and used a bit less of other ingredients. It was so fresh and tasty! I might add even more lemon juice and thyme next time.

    We walked to Whole Foods tonight to pick up a few things for dinner tomorrow. Of course I couldn’t leave without a bit of chocolate… I brought home a chunk of dark chocolate-almond bark. I almost came home with a pair of Toms shoes, but at the last minute I couldn’t decide which color to get. At first I thought white would go with everything, but they’re likely to get very dirty very quickly. So maybe red? I do love red shoes…

    Lemon Broccoli Linguine with Pine Nuts

    • 1 large bunch broccoli, cut into florets
    • 8 ounces fresh linguine
    • 2 tablespoons butter
    • 2 tablespoons olive oil
    • 1 tablespoon grated lemon zest
    • Juice of 1/2 a lemon
    • 1 teaspoon minced fresh thyme
    • 1/2 cup pine nuts, toasted
    • Parmesan cheese for grating on top

    Steam broccoli florets (I do this in the microwave in a covered dish). Cook linguine in salted boiling water for 2 – 3 minutes, or until al dente. Drain pasta, then return to the warm pot. Add butter, olive oil, lemon zest, lemon juice and thyme and toss until butter is melted. Add steamed broccoli and toss a bit more. Sprinkle pine nuts on top, and grate a bit of Parmesan over each bowl.

    Makes 4 servings.

  • Monday blah

    Tonight I tried this recipe… it was just okay. Actually, Justin really liked it, but I wasn’t too impressed. It wasn’t the prettiest dish, but it was dinner. Is there anything more sad than a disappointing recipe? I hate putting so much time, effort, and money into something that’s just so-so. Ah well, at least the asparagus was pretty cheap. (Yay, spring!)

    I watched 500 Days of Summer last night. Another meh. I thought it could have been great, but I’m a sucker for happy endings, and semi-happy endings just don’t do it for me. Give me happily ever after!

    Also, I seriously need to get an evening hobby. I ran out of library books, I finished all my Kindle books, and I’ve scanned in all my film photos. So in the evenings, I kind of wander around the apartment, looking for something to do. I started knitting today, but lost interest in that when I realized it’s not really scarf weather. Maybe embroidery? Or maybe I should just become addicted to a television show, and immerse myself in Netflix every night. Any suggestions?

    Wow, this was a really boring post. I’ll liven it up with this:

    The boys played bocce ball this weekend. Bryan and Conner (on the right) won… Justin and Coach (Bryan’s dad) were a little grumpy about it. It got pretty competitive. 🙂

  • April tunes

    Hello, hello!

    Today I should be in Canton, Texas, browsing through vintage goodies, hanging out with my family. Instead, I’m at home, unable to bear a long car ride because of my lovely sciatica. This is one of the only times I really feel like I’m getting old… like my body’s wearing out on me. That darned sciatic nerve… every few months or so, it decides to get angry and give me some pain. It usually doesn’t last more than a few days, it’s just painful and annoying. Time to do some stretching.
