Why my tummy hurts sometimes

Because I fail to understand that half a cantaloupe is a bit larger than one serving. Once the melons are in season and juicy-sweet, I gobble them up, half a melon at a time, and usually pay for it later. When will I learn?

I wasn’t able to get a good photo of my lovely mail, so you’ll have to visit here to see what I got. We ordered this fabulous poster, and even the package was lovely! It came with a few pretty recycled-paper tags as a gift. I love buying from small designers. It just feels good.

Justin sent me this link for some new Mac ads…I love them! They have that guy from Dodgeball, and they’re just so casually funny.

So now is your chance to comment, internets, because I’m looking for ideas. We’re going camping this weekend, and I’m trying to round up yummy, camp-friendly foods. What do you guys take with you when you camp? When I was little we had boiled eggs and Vienna sausages, white bread and grape soda. I used to love being out on the lake in my dad’s boat, eating a hard-boiled egg with salt, feeling the boat rocking a little, watching the end of my fishing line, which never seemed to bob…back then my mom would fry up the fish that we’d caught that day for dinner. And every so often my dad would make ceviche. Okay! Back to camping! We’re having hot dogs and marshmallows for sure, but I don’t want to worry about refrigeration much the second day. Ideas?

  1. Crystal, Big J eats half a melon in one sitting, too! I love the poster you ordered, very cool. When we go camping we inevitably eat instant noodles or canned soup, things we never eat at home. Have fun!

  2. I love camping and my parents took me every year when I was growing up. I love potato salad, cold pasta salads with olives and veggies. Yum….its my lunch time and I just made myself so hungry….off to get some sushi!

  3. Yum to Cantalope! Solan eats practically half a canta too…I have to remind him to share, so I’ll eat the half with him! Gosh, we’re such fruities here, it’s so hot, who can blame ya. Let’s see as far as going camping, granola! I have a perfect recipe for you if you wish. I would take those small “cartons” of soy milk or powdered milk (yuck!) and we’d take some bananas or dried fruit to put in the cereal. Yummy! I premake sandwiches for our trips to put in our cooler. For some reason, sandwiches on a camping trip are so, so Good! I take olives, sometimes pickles. We often bring those Blue Sky sodas, my fave is the gingerale or we get ginger beer, the extra spicy kind. Chips, apple chips, dried fruit, grapes, bananas and extra yummy munchies like marshmellow are what we bring oh and graham crackers! Yes….hope to see you soon!

  4. I just got back from camping and this is what we made: CousCous (easy, just add boiling water) and my favorite camping food ever (when cooking over a fire) Veggie Packets. Cube potatoes, peppers, shrooms, squash and throw in some garlic, shallots, and diced jalapeno pepper, then drizzle with oil, add salt, and here’s the best part — you put all of this in foil and seal tightly. The fire steams all the veggies to perfection and there’s no clean-up, unless you count tossing the foil in the trash.
For breakfast, we usually just take muffins or hot cereal packets.
For snacks, pretzels, bagel chips, dried fruit.

    Happy Camping!!

  5. Since I’ve never been camping, I don’t actually have any idea what ideal camping cuisine entails…I was driven to post by the beauty of that melon, just by looking at the screen I swear I can almost smell how sweet it is!

  6. You can bake some muffins as for snacks or breakfasts.
Canned chickpeas can be useful for preparing hummus. You can pureé some boiled potatoes, add some tahini, garlic, olive oil,red pepper flakes and make sandwiches with them.Of course I don’t mention avocado ,since you wrote that you had been enjoying avocado sandwiches lately 😉

  7. Baked potatoes and veggie’s in foil over the fire! And of course S’mores..

  8. I love eating salads while camping! I make a weird Greek salad minus the mushy tomatoes & cucumbers but with lots of large diced peppers (all colours), celery, carrots, sweet onion and mixed with olives & feta and tossed with a lemony vinagrette. Also, any kind of bagged salad is good and pasta. When we were on our honeymoon last summer, we found all kinds of boil in a bag goodies at Trader Joes, including the best tuna curry ever. Enjoy camping!!

  9. i don’t camp often, but banana boat smores are my fav. just slice a banana down the middle, stuff with chocolate and marshmallows, wrap in foil and put on the campfire. yum! i love baked bananas!

  10. Crystal,
Here’s the recipe from the book. I think I may have had some things wrong by memory.
    Sauce:
1/2 c. toasted coconut (Put Baker’s sweetened coconut into a dry skillet. Stir very often until it browns)
3 T. peeled and coarsely chopped fresh ginger
2 T. Coarsely chopped shallots or green onions
1 T. Asian bean sauce (Black Bean Sauce)
3/4 c. Vegetable Stock ( I used water and vegetarian bouillon cube)
1 c. palm sugar or brown sugar
1/4 c. Tamarind Liquid (Indian stores have it in several forms. I used 3 T. Tamarind Paste, which is concentrated for teas.)
    1 t. soy sauce
1 t. salt (It was salty enough without this)

In a mini processor or blender, combine the coconut, ginger, shallots, and bean sauce, and grind to a fairly smooth paste. Use a little of the stock if it is too thick.
In a saucepan, combine the coconut-ginger paste, vegetable stock, sugar, tamarind, soy sauce and salt. Stir well & bring to rolling boil over med. heat, stirring often. Boil for 2 min., stirring and adjusting the heat so the sauce doesn’t boil over. Reduce heat and boil for about 10 minutes or until the sauce is dark brown, thickened to a medium syrup.
Cool sauce to room temperature. Sauce keeps well when refrigerated, but serve at room temperature.

Treats that go in the lettuce wrap:
    1/2 c. roasted coconut
    1/2 c. cut-up peeled fresh ginger
    1/2 c. cut-up limes, including peel (1/4 inch chunks)
1/2 c. cut-up shallots or green onions (1/4 inch chunks)
2 T. thinly sliced fresh green chiles (serrano or jalapeno)
    1/2 c dry-roasted peanuts
    1/2 c. salted sunflower seeds
    1 head of lettuce
Arrange all the treats except the lettuce in separate bowls. Separate the lettuce leaves and arrance on a platter. Cut them smaller if they are too latge. Place the sauce in a small deekp serving bowl and provide a serving spoon.
To eat, take a lettuce leaf, add small amounts of each treat to it, and then top with a dollop of sauce. Fold into a small packet and pop it into your mouth.
    Enjoy the explosion of flavor!

  11. That title of your post cracked me up… I only started loving melon (honey dew and cantalope) after I had my daughter a couple of years ago. Now I can’t get enough. It is hard not to keep shoving pieces in my face as I am trying to get it cut up for my daughter. It is way to good and juicy! YUM! I am so happy I have one at home right now. Because I am so craving it!

  12. Glad to see I’m not the only one in love with cantaloupe. 🙂 Faye, thank you so much for sharing that recipe…it was amazing!
