Another attempt to use some CSA produce: Lentil Soup. This was on the stove Saturday night when we were being crafty ladies. I used to make lentil soup at least once a week, using Jacques Pepin’s recipe, but somehow I forgot about it. When Leti and I were shopping on Saturday, I said, “How about lentil soup for dinner? With kale in it?” and she immediately agreed.
Can I remember the recipe? I’ll try. (Leti, let me know if I forgot something!)
Lentil Soup with Kale
- 3 cans vegetable broth
- 4 cups water
- 1 cup lentils, rinsed and picked over
- 2 cloves garlic, minced
- 1/2 a medium onion, chopped
- 1 medium potato, peeled and diced
- 2 large carrots, diced
- 1 head of kale, chopped
- 1 teaspoon thyme
Put everything except the kale in a soup pot and simmer, partially covered, for 30 minutes. Add the kale and simmer for 10 to 15 minutes more, or until lentils are tender.
Makes 6 servings.

mmmm, i make a very similar lentil soup recipe with way more garlic and spinach instead of kale. i think kale is a good choice tho! looks delicious!
I made a lentil soup last weekend that had sweet potatoes in it. Super good. It also had kale in it, but I had spinach on hand and used that instead. I posted it on the cooking light board and you can find it on my blog as well. I saw another lentil soup on Everyday Food the other day that I may try next.

Kickpleat, Justin is a fan of kale, not so much of spinach. Christina, I like the idea of adding sweet potatoes! They’re so yummy in soups. I think I’ve tried the Martha Stewart recipe, as well as the CL Bree’s recipe, but I always come back to this non-tomato version. Leti, thanks for helping me make it! And Pearl, it has been hard to keep up with all these veggies. We recently started splitting our loot with our friends Chad and Lindsay, and it has worked out well. It’s a lot of greens for two people (especially if one of them doesn’t like greens!).

I love lentil soup. I’ve tried it with tomatoes several times and for some reason it throws off the whole balance of the dish. The kales a great idea though. I bet it holds up well.
