Another attempt to use some CSA produce: Lentil Soup. This was on the stove Saturday night when we were being crafty ladies. I used to make lentil soup at least once a week, using Jacques Pepin’s recipe, but somehow I forgot about it. When Leti and I were shopping on Saturday, I said, “How about lentil soup for dinner? With kale in it?” and she immediately agreed.
Can I remember the recipe? I’ll try. (Leti, let me know if I forgot something!)
Lentil Soup with Kale
- 3 cans vegetable broth
- 4 cups water
- 1 cup lentils, rinsed and picked over
- 2 cloves garlic, minced
- 1/2 a medium onion, chopped
- 1 medium potato, peeled and diced
- 2 large carrots, diced
- 1 head of kale, chopped
- 1 teaspoon thyme
Put everything except the kale in a soup pot and simmer, partially covered, for 30 minutes. Add the kale and simmer for 10 to 15 minutes more, or until lentils are tender.
Makes 6 servings.
