Nourishing

Lately my goal has been to ingest as many fruits and vegetables as possible. I don’t want to cut out foods. I don’t want to stop drinking. I don’t want to give up coffee or not eat sweets. But I can add in more fruits and veggies, and I think that’s a good start.

Juicing is an easy way for me to get the goodness in. Some beets, an apple, some ginger, maybe a few carrots – it’s bright and beautiful and delicious.

Then I use the beet greens and bits of broccoli in a scramble – and just like that, I’ve taken in a plethora of vegetables and fruits.

Now if only I could wake up early enough each day to do this.

  1. Do you have a juicer? And if so, is it really, really expensive and do you like it? I really want one, but I don’t want to pay crazy amounts of $$ for one.

    1. We do! We have this little $100 juicer, and it works great. Like all juicers, it takes a bit of cleanup after making each juice, but it’s not hard. I love it.

  2. This looks perfect–fresh, healthy, comforting. Please magically show up at my house tonight and make this for me.

    1. Roger that. Except that I’m out of beets. 😉

  3. I haven’t tried beets in my juices yet, but lately I love kale, spinach, pear and pineapple. I feel like my body is happy when I drink a fresh juice:)
And then I don’t feel too bad about all the pastries I eat everyday!

    1. Mmm, pear and pineapple! The other day my friend had a green juice for the first time, and he said, “Wow. I feel like I just chose life over death.” 🙂
