veggies for dinner

I was determined to use up some veggies. I steamed some corn, and fried some okra. I toasted bread and topped it with tomatoes, leftover cabbage and white beans, and a fried egg.

I can’t explain how much more fun it is to cook when I have more time. And summer produce! It’s so inspiring.

Tomorrow I get to hang out with my sister, who is in Austin for a day or two. I think we’ll start with coffee and croissants at La Boite, then hair fun at Vain, then maybe a late lunch somewhere. Suddenly when I have a visitor, I can’t figure out what to do! Maybe show her the Domain? Tea and scones at the Steeping Room? A visit to Book People or Domy? Drinks on the patio at FINO or La Condesa? An afternoon cupcake tour? Early evening snacks at East Side Show Room? I love how this all centers around food. ๐Ÿ™‚

Hope you’re all having a great Monday.

  1. That corn looks good. It’s interesting, though – I think they only eat okra in the south and India.

  2. I love fried eggs on bread!..and especially for dinner.

The okra looks great and inspires me to buy some different veggies next time I’m at the store.
