In which we embrace the plant-base
(Oh hi, it’s been a while, we’re changing things on…
Breakfast: banana and yogurt. I tried La Creme vanilla, because I used to love it so much, but now it seems really sweet. I ate the banana and tossed most of the yogurt.
Lunch: home-frozen meal. I made quinoa, roasted veggies and chicken a while back, and portioned it into containers and froze them. It worked out really well!
Dinner 1: hot dog with mustard. I had a hot dog craving. We only buy Nathan’s all-beef franks because they’re so dang good. I had these leftover from making the mummy dogs for the zombie party.
Dinner 2: toast topped with collard greens and fried egg. I just sauteed some garlic in olive oil, added the greens, a splash of red wine vinegar and salt, and cooked it until the greens were tender. Then I fried an egg in the same pan. I didn’t finish it all, given that I had just eaten a HOT DOG, but it was still delicious.
