Brunch: a thin bagel BLT with avocado from Einstein Bros.
Snack: a watermelon agua fresca from F&F Fruit Cups (not pictured).
Dinner: a little thing I call Lazy Lasagna – it’s like homemade hamburger helper. Here’s how I made it today:
Brown half a pound of ground beef in a pan. Add half a jar of pasta sauce (we like Rao’s Marinara). Add maybe a cup of cottage cheese. Simmer a bit. Meanwhile cook half a pound of pasta in salted water. Drain and add to the sauce mixture. Mix well, then top with grated mozzarella (or my favorite, the quattro formaggio blend from Central Market). Cover for a few minutes until the cheese on top melts. That’s it! :)
