In which we embrace the plant-base
(Oh hi, it’s been a while, we’re changing things on…
Breakfast: tall soy latte. My regular mocha seemed kinda sweet, so I tried a latte, but it tasted equally sweet. I think next time I’ll go for a cappuccino.
Lunch: egg-in-the-hole , plus a Farmhouse tangerine.
Dessert: a piece of dark chocolate with a smidge of peanut butter.
Dinner: I made this salad concoction. It’s a mixture of tuna, cannellini beans, green onions, radishes, lemon juice, olive oil, salt and pepper; plus a few bits of avocado; all atop lettuce dressed with a quick vinaigrette (red wine vinegar, olive oil, Dijon mustard, salt and pepper). I just made it up, and it turned out to be really awesome.
Dessert: peanut butter-chocolate cupcake that my friend Andy gave me today. Justin and I split it, but I ended up eating more of it because he’s not a big peanut butter fan.
