More bananas and chocolate

This seems to be a theme on this blog…old bananas and chocolate chips. They just go so well together! Here’s another quick and delicious way to get rid of those spotty bananas.

So I’ve been hard at work, adding photos and categories to old posts, but it’s very time-consuming. I’m hoping to finish that within a week or so, then move on to updating the recipe index. I’m so excited to have all these old posts back! It’s fun to see how much I’ve changed, or haven’t changed, in the past 3 years.

Cookie time.

Banana Chocolate Chip Cookies

  • 1/3 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup mashed ripe banana
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking soda
  • 1 cup (6 ounces) semi-sweet chocolate chips

In a small mixing bowl, cream butter and sugar until light and fluffy. Beat in the egg, banana and vanilla. Combine the flour, baking powder, salt and baking soda; gradually add to creamed mixture. Stir in chocolate chips.

Drop by tablespoonfuls 2 inches apart onto baking sheets coated with cooking spray. Bake at 350 degrees F for 9 – 11 minutes or until edges are lightly browned. Remove to wire racks to cool.

Makes 3 dozen cookies.

  1. (happy clapping!)

for some years, i’m bigger on the flavor of bananas than just a banana itself, and i’ve found chocolate and banana, as well as coffee and bananas to be a great pairing.

not to mention every ice cream is better with some banana in it!

  2. Mmmm, coffee and bananas…I’ll have to look into that. 🙂
