What’s better than a tomato-avocado-balsamic sandwich on rosemary bread?

Or three.

My friend Doug bakes bread for a living. He bakes bread, people. How cool is that? I don’t know whether he made this loaf or not, but I bought it today at Central Market, where he works, and decided to have sandwiches for dinner (notice the plural there). This is probably my favorite sandwich ever…and it’s even better on this fabulous rosemary bread. It’s odd, because I’m not usually a big fan of rosemary, but I want to marry this bread. Doug, if you made this loaf, I thank you.

Anyway, I don’t remember if I’ve posted this sandwich before, but just in case:

Tomato-Avocado-Balsamic Sandwiches

  • Slices of fabulous bread (whatever your favorite may be)
  • Thin slices of ripe tomato
  • Small chunks of ripe, creamy avocado
  • A sprinkle of kosher salt
  • A few grindings of black pepper
  • A tiny drizzle of balsamic vinegar

Lay the tomato slices on a slice of bread, and sprinkle the avocado on top. Sprinkle with a bit of salt and pepper, and drizzle with balsamic vinegar. Top with another slice of bread and eat up.

  1. crystal, that bread looks amazing!! i’d add some red onion to that sandwich…but that’s just because i’m too chicken to eat just tomato and avocado together. i know, i’m a pussy.

  2. I admit I would probably add a little cheese but it sounds great! I wonder how it would taste on green chile bread?

    I really miss tomatoes. I haven’t eaten anything with tomatoes in it for over 6 months.
    (It promotes acid indigestion)

  5. A friend of mine recently introduced me to the English Toasting Bread at Central Market – it really does make an ideal slice of toast. Crunchy and crumbly all over, but not too hard. I highly recommend it!

  6. Since I lack the necessary skills to perform in the kitchen, I look to your blog for inspiration and ideas. Looking forward to whipping up a batch of that soup mentioned in the previous post.
